Beyond trends inspired by New Year’s resolutions, however, there has been a boom in de-alcoholic drinks. Beverage brands and fancy bartenders are crafting complex virgin cocktails and beers, in an effort to placate the tastebuds of sober people, temporary teetotalers and those who abstain from alcohol in general. But how do they actually prepare these drinks? And how well do they fit our cultural expectations of what a “drinking” should be?
